We are moving back to Slovenia’s coast to taste one of Cabernet Sauvignon’s ripest, well-produced expressions you can find. We’re stopping at Bordon to taste their macerated, ripe and barrique matured wine.

Grapes have been hand-harvested at optimal ripeness at slopes that are irradiated by the sun throughout the day. Through them, gentle breezes swift through the day, guaranteeing conditions for efficient organic farming.

After hand-picking, destemming and crushing the mash macerates with spontaneous fermentation for 21 days in open vats. Then it’s gently pressed and racked to mature in barriques for thirty months. Finally, it is bottled without filtration.

This results in a Cabernet Sauvignon with deep ruby red colour and a slight purple tinge. Dense, leaving traces on the glass’ walls.

Its alluring and intense aromas reveal blackberries. Overripe blueberries, black currants, mulberries, also a note of plum, and black cherries, also hibiscus. Slowly, notes of cinnamon, cloves, chocolate, carob and smoke start to open up.

A dry rendition with pronounced softness, with well-integrated alcohols. At the same time, fresh and tannic. Tannins are grippy, drying our mouths. A wine of character with an intense and lasting taste of a vigorous body. We taste blackberries, hibiscus, chocolate and sweet spices on the aftertaste. It shows its youthfulness and tremendous ageing potential.
