Let’s move to the sunny Slovenian Istria to look at a deep Cabernet Sauvignon, produced at one of the most super modern wine cellars – Brič.
The Brič property spans over 36 hectares of organically farmed vineyards and olive trees, at an altitude between 270 and 350 meters above sea level above the valley of the Dragonja river, right at the border with Croatia.
Grapes for today’s pick were coming from the vineyard close to the estate and was hand-harvested. After destemming and crushing, a seven-day maceration was executed at temperatures between 25 and 35 ° Celsius. It was then laid to mature in used French barriques and stainless vats with fine lees for two years. Finally, it was bottled and waited for few months in the cellar before coming to the market.
This results in a Cabernet Sauvignon with a deep ruby red colour and thick texture.
Its intense bouquet initially resembles notes of kerosene, but over time it develops into hints of smoke. With time we detect notes of blueberries and black currants, including mulberries. A wine that you have to spin in a glass because it shows many faces and takes time to reveal all its different shades. Eventually, black cherries open, reminding me of a cherry pie because of the aromas of black fruit, butter, vanilla, and crispy dough. Buttery and then notes of coconut, liquorice and coffee.
A dry wine with softness, well-integrated alcohol but still with crisp freshness and salti minerals. Excellent tannic grip, where tannins slowly round off. A wine with a vigorous body, with lasting persistency and accentuated elegance revealing flavours of overripe and dry forest berries, Mediterranean herbs, sweet spices and smoke.
