We’re returning tonight to the Erzetič family in Pristavo who are crafting wines under the Čarga mark, as there is a sparkling wine I’m looking forward to tasting. We’ll be sipping a glass of their vintage Donna Regina Brut nature, which has been produced following the methode traditionelle method.
Donna Regina is the lady we see pictured on the label. The whole range of sparkling wines is named after her as a homage to her spirit.
We could say that Donna Regina is a Blanc de Blancs as it is assembled with 40 % Rebula, 30 % Chardonnay and 30 % Pinot Blanc. Wines are harvested from the plots that lay on the plateau beneath their genuinely remarkable estate.
Each variety is handpicked and vinified separately. After the final assemblage, the basic wine matures in oak casks. In March of 2017, the wine was drawn for the prise de mousse until being disgorged after 30 months of maturation sur lie.
Donna Regina presents with a brilliant and crystal clear, golden yellow colour. We observe numerous, tiny and persistent pearls that elevate to the surface.
The bouquet is intense and mature. We notice lemon zest, boiled apple, a slice of papaya, orange peel and linden flower. With a slight note of yeast that evolves into pan-brioche.
The taste is bone dry, refreshing and mineral. Its bubbles caress us pleasantly, leaving us with intense perceptions of a lasting in pronouncedly elegant, full-bodied taste.
