Oh, what a treat for tonight! Actually, we didn’t move far from yesterday, maybe just a couple of meters below. We’re in Vipolže, and the wine for today is non-other than the iconic Triton Lex by Edi Simčič!

A wine which just thinking of it brings such memories! When I was a total wine rookie, visiting their estate for the first time back in 2009. Vivid is the memory of when Aleks delivered us a couple of magnums of this wine the day after revija Vino‘s dinner, organized at the then not even opened villa – Alma Vista.

And then, becoming a sommelier – actually this wine was what we cheered with! There is a special sentiment towards these three tenors, assembled by the symphony of Chardonnay, Sauvignon Blanc and Rebula, an equal part of each, a Triton. And then the Lex, like law, like strength, like persistency – the mark for their superior quality wines. And a wine which Aleks refers to as a painting of his personal wine!

Assembled as a “homage” to the greatest international wines, adding a local touch, what better to pick than Rebula itself, vineyards aged between 30 to 50 years. A short maceration of 3 – 4 hours, then ageing in selected French barriqes for 10 months, and further 6 months of bottle ageing. And that is enough, for such an astonishing result!

Our glass glitters with a strawy yellow colour and a golden tinge.

It immediately enchants with sumptuous aromas of ripe apple, carambola, candied orange, lemon blossom, lavender, and mint. Followed by buttery aromas, almonds, allspice, vanilla, a gentle note evoking croissant finishing with quartz.

The taste is in a perfect balance between its oily softness, well-incorporated alcohols, freshness and minerality.

A multi-layered wine with a complex texture that impresses with its intensity, and long-lasting nobility! A wine of immense pleasure that can offer a lasting immersion of our senses into a symphony of spoilage.

Honestly, it’s not far from topping my whites’ chart, similar to as Kolos did with reds.
