We’ve touched Iaquin‘s Dolan and Cabernet Sauvignon here, so I want to indulge you with their refined Chardonnay. An exquisite, oak-aged wine displaying all the mastery of Uroš, who managed to produce yet another elegant wine.
The vineyard of this Chardonnay has an amphitheatre shape below the castle of Vipolže. The altitude is 80 meters above sea level, and it faces the west. It counts for 15 years of age.
Grapes are hand-harvested at optimal maturity in the morning. After destemming, berries are left to rest in the press for 2 hours. The juice is then left in stainless vats to clarify for one day. It is then transferred to another vat and inoculated with selected yeast to start the fermentation.
After two days, it is moved with fine lees to mature in Louis Latour barriques. 35 % are new, and the rest is used up to 4 times. After a year of maturation and Batonnage, where it also conducts malolactic fermentation, it is ready for coarse filtration and bottling. Ideally, bottles wait for a year before coming to the market.
This process creates a Chardonnay with brilliant, golden yellow colour and dense texture with slowly slipping tears on the glass walls.
The bouquet is intense, majestic. Buttery notes, vanilla, ripe yellow apple, lemon, white flowers, notes of croissant, cinnamon, yellow rose petals, liquorice, nutmeg and dried Mediterranean herbs are perceived.
The taste is intense, soft, with nicely incorporated alcohol, and youthfully fresh and salty mineral. It expresses in a balanced, distinctly elegant, full-bodied wine with a long-lasting, harmonious aftertaste. Flavours reconfirm aromas of matured yellow fruit, butter and sweet spices, leaving a scent of toffee in the finish.
