We’re returning to Bojan Kobal tonight to taste one of his distinctive cuvées, a blend of Chardonnay and Gewürztraminer that matured in oak and is named White reserve.
Grapes are coming from the steep slopes of Haloze, from vineyards that count for approximately 35 years. The composition of this wine amounts to 60 % Chardonnay and 40 % Gewürztraminer. This is a late harvested wine, where grapes are destemmed and crushed. The mash then macerates at temperatures between 18 and 20 ° Celsius. Finally, it is gently pressed and racked into French barriques, where it matures for two years before being bottled.
White reserve wears a golden-yellow colour and dense texture.
Its aromas are sumptuous and intense. We detect red apple, passion fruit, and hints of mandarin. Orange peel is joined by lemon blossom scents. Both rounded off with a touch of floral honey. In the end, we discern hints of butter, vanilla and rosemary.
The taste is soft, and the perception is warm. Refreshing acidity with pronounced mineral saltiness seduces us into an elegant, long-lasting, full-bodied taste.
It is a wine of intensity that spoils with its aromatic composition and its mouthfeel. It has the potential to age for 5 to 7 years.
