Let’s return to the hilly Štajerska Slovenija to look at a unique blend named Tree. A wine composed of 50 % Chardonnay, 30 % Sauvignon and 20 % Welschriesling produced by refinement in large oak barrels. We’re at M, simply good wines.
We’re at the slopes of Pohorje, with vineyards reaching up to 400 meters above sea level. Organically farmed, vertically arranged vines are planted in Quartz soil, and the vineyard is grassed. Aspect is south, providing enough sun for grapes to ripen, while cold alpine breezes act beneficial for the finesse and aromatic aspect of wines.
Grapes are hand-harvested with rigorous sorting already in the vineyard. All varieties are picked at the same time. When destemmed, grape mash macerates for various times with spontaneous fermentation. After gentle pressing, it is racked into 500-litre oak barrels with fine lees, where it matures for 36 months—also conducting malolactic fermentation. Finally, the wine is bottled without filtration, with minimum addition of sulphur.
Tree presents with a crystal clear, strawy yellow colour with a golden tinge and dense texture.
Intense and pleasing aromas present with herbs, mint, thyme, gooseberry, almond and jasmine flower, then pineapple, peach, tangerine, lime and green bell pepper. With butter, vanilla and a slight note of wet stone.
The palate is off-dry, soft, quite warm with accentuated freshness and minerality to balance the taste. Tree presents as an elegant, full-bodied wine with lasting persistency.
