Let’s move tonight to the wine cellar Sanctum over to the hills of Lipoglav to have a look at their famed expression of Pinot Noir that is produced only in the best vintages allowing it to vest the title of Prestige.
There is something with the location and the affinity towards nobility at the Podbukovšek family, and we are tackling their hommage of Pinot Noir, coming from the Lipoglav vineyards right above the wine cellar, with a selection of their best plots to form what is this prestigious assemblage.
Grapes were hand-picked with rigorous selection. After destemming and crushing, they macerated with spontaneous fermentation. After a gentle pressing, the juice was racked into used barriques, where it matured between 12 and 18 months until the final assemblage. Finally, it was bottled without filtration.
Sanctum’s Pinot Noir Prestige displays a deep ruby red colour that brightens towards its edge and shows dense tears.
Its bouquet is intense; we detect black cherry, plum, a slight note of smoke, roasted hazelnuts, undergrowth, with a subtle perception of coffee and chocolate.
Its palate reveals noticeable softness, but it has accentuated acidity and satin tannins. An elegant, full-bodied wine with a lasting persistency, expressing all of the charms of this variety.
This is a Pinot Noir that has the potential to age for the next seven and more years. A bottle will cost you 25 Eur and you can order it at Fine Slovenian Wine.
