Time to look at another wine from the selected range of Ronk wines that are being released under the Selectus name. We’ll taste their oak matured Chardonnay.
Grapes are handpicked from vines that count for more than 40 years. The mash was macerated for 36-hours with a gentle pressing with a pneumatic press.
The juice was racked into stainless vats where fermentation started and again into oak barrels where it matured for the next ten months, also undergoing malolactic fermentation. After the bottling, it had to wait for at least 10 months in the cellar for its release to the market.
This resulted in a wine of extractive, golden yellow colour with a pronounced viscosity.
Its bouquet is intense, expressively elegant. We detect ripe yellow apples, candied citruses, honey, chamomile, as well as roasted almonds, caramel, and vanilla. Hints of honey wax are followed by pan brioche, hot stone and rosemary.
A wine with softness and moderate warmth. Freshness is emphasized and plays with its mineral signature that just shows its good ageing potential. Ronk’s Selectus Chardonnay is a wine of intensity and nobleness, with a lasting aftertaste in which scents of baked apple, caramel, roasted nuts and rosemary are revealed.
