
We’ve spent such a lovely day today at Brda, and for starters, we stopped at old friends at Viplože. Andrej Kristančič of Ronk was so kind to invite us over and present us with some of the news they have in store. And this Sauvignon Blanc, matured in oak barrels, was something classy and outstanding.
We’ve been acquainted with brothers Davor and Andrej Kristančič for a long time. I know Davor since high school, our wives have been classmates, and it’s so lovely to hear so much great news from these heartwarming people. Unfortunately, only Andrej was able to make it today, but I’m sure we’ll soon have the chance to cheer together and have a few words over the news and some of the old days.
But let’s get back to today’s wine. The Sauvignon Blanc Selectus is assembled by grapes coming from three different plots. One is from the flor, meaning it provides freshness, longevity and finesse. The other two are from steep, upper slopes, where the body and extracts tend to come.

Bunches have been harvested at optimal and overripe levels. After destemming and crushing, the mash macerated for three days at cold temperatures. It was then racked in a large vinificator where fermentation started with the help of selected yeast. Somewhere in the middle of fermentation, it is racked in a combination of new and used oak with batonnage being executed until December. In September, it is finally bottled, with minimum addition of sulphur, and then it should wait of r two to three years before it gets to the market.

Its alluring bouquet presents the variety, only that it is enriched with secondary aromas. We have ripe tropical fruits, pineapple, papaya, but notes of honey, lemon peel, thyme, rosemary, butter in the sense of lemon crust, shortcrust pastry with lemon cream, almonds, vanilla, mint and honey.
The palate feels soft, fairly warm, with a crisp and mineral salinity. It feels like a balanced wine thanks to the structure and freshness in the wine. It’s a full-bodied rendition with accentuated elegance and long persistency. Above all, its crisp freshness prolongs the intensity of the elegant taste of the wine. A wine that has the potential to age for at least 5 to 7 years.
