Let’s look tonight at a rendition of Cabernet Sauvignon produced to express all the advantages of this prestigious yet demanding variety. Primarily due to its late ripening that requires lengthy and dry seasons. Something that seems a familiarity when looking at the expression produced at the Ščurek family.

Grapes of Cabernet Sauvignon follow a classical procedure of vinification. After destemming and crushing, the mash macerates for ten days with fermentation to extract colour and flavours. The young wine then matures for ten months in used oak barrels—the perfect formula to produce an expressive Cabernet Sauvignon, which presents as following.

Deep, ruby red coloured with dense texture.

Its bouquet is intense and mostly fruity. We detect blueberry, black currant, paprika leaf, a note of red pepper, fern and cedar.

Its taste is dry and soft, with well-integrated alcohols. At the same time, it shows young, astringent tannins, drying our mouths with crisp freshness and minerality—a wine of intense and persistent taste, full-bodied with expressed elegance. Perceptions of wild berries and undergrowth are bestowed on the taste.

Ščurek’s Cabernet Sauvignon is a beautiful example of this variety, suitable for drinking now or in three to five years. A bottle will cost you approximately 10,40 Eur, and you can order it at eVino, Koželj, Mabat INT, Vinoteka Sodček, mimovrste and Z okusom.
