Let’s return tonight to the family Gašparin. We’re setting on to discover a Penina marked by a long ageing sur lie. We’ll be looking at Silveri‘s Nature 0, produced by the traditional method as a blend of Rebula and Chardonnay.
A Blanc de Blancs produced with grapes coming from three vineyards. 30 % of Rebula from the 45 years old vineyard Muško, planted at an altitude of approximately 180 meters above sea level. Another 30 % of Rebula from a 20 years old, south-west facing vineyard Gmajna planted at 200 meters above sea level and 40 % Chardonnay grown at south-west facing slopes of Muško.
The basic wine is produced following traditional methods: low yielding, gentle pressing and maturation with fermentation in stainless vats. Ultimately the magic happens with bottling for secondary fermentation with maturation on lees for eight years, impacting a distinctive autolytic character into the final wine. It is bottled without dosage after disgorging.
Nature 0 presents with a brilliant, golden yellow colour with numerous, tiny and long-lasting pearls that sparkle in our glasses.
Its bouquet is intense and luxurious. We distinguish a ripe apple, papaya, apricot, as well as aromas of chestnuts, dried flowers, honey, marzipan and a sweet bread crust.
The taste is bone dry. Yet, at the same time, the emphasized acid refreshes us and leaves us salty. Its elegant taste reveals the intensity, fullness of structure and a lasting and focused persistence.
