There are some gems you need to discover, and tonight we’ll look at one of those. A selected Cabernet Sauvignon, delivering such stunning results it was stored and kept away in the cellar for a designated club of lovers. Tonight we’re tasting Vinakopers‘ Cabernet Sauvignon.
There are few terroirs in Slovenia that can deliver outstanding renditions of Cabernet Sauvignon, and Vinakoper owns some great plots that are able to give optimal conditions. By this, I mean warmth, sun and long, dry autumns allowing for proper ripening of grapes.
Fully ripe grapes were handpicked, destemmed and crushed. The mash then macerated for an extensive time and after a gentle pressing, it was racked to mature in oak barrels and long bottle ageing in the cellar.
This results in a Cabernet Sauvignon of ruby red colour that looks youthful and has a dense texture.
The bouquet is intense and fruity. We can inhale the aromas of blueberry jam, black currant, black cherry, as well as notes of dried violet and hibiscus. They are joined by scents of chocolate, coffee, and liquorice, with carob, forest undergrowth and smoke finishing the aroma profile.
The wine is dry, soft and fairly warm. Stil vividly fresh, tasty and with velvety tannins indicating its youthful character. Flavours of black cherry, maraschino, plum, chocolate, sweet spices and coffee are expressed on the palate.
This Istrski Rubini Cabernet Sauvignon has a huge potential for ageing, I wonder where it will be in 10 years. This wine is available for members of the Istrski Rubini club, but if you’re lucky when stopping at one of Vinakoper’s stores you might get the chance of tasting it.
