We’re returning to Vipava valley’s cooperative cellar that has been releasing wines since its conception in 1894. We’ll be looking at their Malvazija that is released under the Terase line – this is their top range of wines produced with grapes coming from selected, best plots.
This Malvazija combines grapes from four plots of the Vipava Valley planted on Ponka with some clay pockets. Grapes are destemmed and crushed, and the mash then macerates for seven days, also starting spontaneous fermentation. The wine is then racked into 500-litre oak barrels with fine lees where it matures for a year. Finally, it is bottled and introduced to the market.
This results in a crystal clear, golden yellow coloured Malvazija with a dense texture.
Its aromas are intense and refined. We sense ripe tropical fruit. Pineapple joins with papaya and orange. We glimpse lemon and acacia blossom flirting with scents of honey. Woody notes add aromas of caramel, clove and roasted nuts. In conclusion, we find hints of dried Mediterranean herbs.
The taste is intense, warm. Its freshness is youthful and plays with the mineral signature, noticeable also a slightly tannic astringency. A full-bodied wine with a lasting, elegant aftertaste.
