When speaking about wines that emanate an archaic feeling than Korenika & Moškon‘s Paderno is a wine to look for.

Coming from Korte – the heart of Slovenian Istria this wine cellar was found a quarter of the century ago.  Now the second generation is taking care of it and boy what a great couple Matej and Tina are! Full of knowledge, always ready to share their knowledge.

They own 25 hectares of vineyards and 2,5 of olive trees. Their production covers three different styles of wines, olive oil, fruit juices and spirits, all crafted with deep respect to nature.

Today’s wine bears the name of the vineyard – Paderno that is planted 150 meters above sea level on flysch, mostly composed of maritime sediments, marl and limestone and faces southwest. Vines of Malvasia Istriana counted 23 springs at the time of picking.

After an initial 25 day maceration and fermentation with natural yeast at uncontrolled temperatures, it first matured on lees for 12 months, and then for 56 months in big 500 litre barrels. The final assemblage rested in barrels for 3 months before being bottled without filtration and stabilisation.

It has a limpid colour of old gold with an amber hue. It is consistent and we notice some fizziness in it.

The nose is mature pronouncing wood, graphite, caramel, cloves, black pepper. Eventually, we detect hints of vanilla. Slowly layers of dried fruit appear, with pineapple, papaya, apricot, yellow fig, citrus peel. Then forest honey, dried yellow rose, straw, and roasted almonds. Each twist of the glass is an intense layer of new sensations.

The taste is intense, the texture is oily with pronounced softness. It has an attractive acidity that refreshes our palate with delicate pinching dizziness, leaving our mouth with a mineral signature. Its body is vigorous, lasting and spicy in the finish.

Biodynamic inside, as stated in their brand promise this is what you get. A non-conformist wine with raw, muscular structure but lots of warm kindness in it.
