Benčina - Opus Bonum, 2016
Ad omne opus bonum instructi! Or as it would stand for fashioned English “Ready for good work”, and yes, this blend of Cabernet Sauvignon and Merlot is an Opus Bonum indeed! So we’re in Vipava valley today, at the Benčina family, looking at their most prestigious wine.
Opus bonum is composed of 70 % Cabernet Sauvignon and 30 % Merlot. Both are hand-harvested at optimal ripeness and vinified separately following the same process. First, grapes are destemmed and crushed. The pomace then macerates for ten days at temperatures around 20 °Celsius. Following a gentle pressing, it was racked into barrique barrels where it matured for two years, conducting malolactic fermentation during this time.
Opus Bonum presents itself with deep ruby red colour and dense fluidity. It quickly settles in the glass and creates slowly slipping tears.
Its aromas are intense, alluring presenting scents of black cherry, plum, mulberry and blueberry. Followed by hints of hibiscus and cedar. Vanilla flirts with coffee, cloves and cinnamon, and finishes with a touch of leather.
Dry on the palate, soft, and fairly warm. fresh and salty mineral with youthful, grippy tannins. A wine of intensity with a lasting aftertaste and a vigorous body. Its elegance is pronounced and will only intensify with maturation.
