Fedora - Rebula, 2018
Time for us to return to Fedora, to Valter and Mojca, and their sun gazed, and wind caressed wines. We are actually at the high slopes of Vipava valley, almost on the brink of the Karst plateau, which generates ideal conditions for freshness and finesse.
This is actually one of their first renditions of this varietal wine, produced peculiarly. This wine spontaneously ferments and matures for a total of eighteen months in an egg-shaped concrete tank. Finally, it is then bottled without filtration.
This results in a Rebula with hazy, golden yellow colour and dense texture.
Aromas are intense; we perceive yellow apple and fig, grape berries, papaya and mango, as well as yellow petals that are followed by white pepper, nutmeg, with hints of sweet bread crust, butter, and sweet root.
A wine that emanates softness and well-integrated alcohols. But at the same time acts fresh and mineral with a slight astringent grip. Thanks to its pronounced softness, it acts balanced. However, its crisp freshness keeps indicating that it still has a long way to go. A wine of intensity and structure, with a lasting, elegant aftertaste with flavours of citruses, yellow flowers and fruit intertwine with sweet spices.
