Time to pop open a fabulous rose sparkler that is coming from non-other than one of Brda’s leading producers of sparkling wine. We’re at the Sirk family and their Bjana wines, who just had their first harvest in the new wine cellar, built at the start of the village Biljana.

Bjana is the name of the village of Biljana in the local dialect. This is where Miran Sirk and his family craft distinctive sparkling wine according to the traditional method. The Dorišče mansion, which they own, is among one of the oldest cellars to be built in the region.

Their Brut rose consists of 75 – 85 % Pinot noir and 15 to 25 % Rebula. Grapes are hand-harvested and directly pressed. The juice ferments and is then bottled with liqueur de tirage to start secondary fermentation and ageing on lees for at least two years – with the average being close to thirty months – before finally being disgorged and finally presented to the market.

This results in a bright pink coloured, brilliant wine with many tiny and long-lasting pearls.

The aromas are intense and refined, reminiscent of red apple, blood orange, cherry, even rosehip, and at the same time offering gentle notes of yeast and bourbon roses.

A very dry sparkler with softness pronounced freshness at the same time. The perlage tickles us and leaves a pleasant note of nuts. A structured Penina with an intense and lasting persistency but most of all noble elegance.
