We’re returning to the Sirk family tonight as there’s a true icon we taste tonight. Finally, it’s time we introduce Bjana‘s Brut non-vintage sparkler, who indeed can have the status of legend.

Bjana Brut is produced following the traditional method as a cuvée of 60 % Chardonnay, 30 % Pinot noir and 10 % Rebula. Each of the varieties is harvested and vinified separately. Basic wines typically ferment in stainless vats at temperatures not higher than 16° Celsius.

The final cuvée is assembled and bottled to start secondary fermentation. The total timing of ageing on lees is 30 months before its disgorgement and dosage that typically consists of a sweet, late harvest wine.

This results in a strawy yellow wine with a golden hue in which many tiny and persistent bubbles sparkles.

Its aromas are intense, particularly fruity. We regard a yellow apple, gooseberry, bergamot, lemon peel, notes of almond blossom, yeast and bread crust, and a slight note of sweet bread.

The taste is very dry. Bubbles fill our mouth and, combined with its zesty freshness, refresh our palate, leaving a fruity aftertaste—a wine of intensity, persistency and elegance, with good structure.

An ideal wine to indulge in the coming festivities. A bottle will cost you approximately 23 Eur, and you can get it at Merit, eVino, Koželj, Bewines, Mabat-Int, Vinoteka Sodček, Mercator and Spar.
