Domaine Slapšak – Blanc de Blancs, N. V.

Time to return to the slopes of Telče, to the Slapšak family, as there’s another brilliant sparkler we need to have a look at. We’re tasting Domaine Slapšak‘s Blanc de Blancs, a methode traditionelle produced with Chardonnay.

This is a nod to the origins of Francois Botton, the oenologist from Reims who moved to Slovenia after meeting his fiancee Urška Slapšak. Grapes are coming from a single plot – Pesce planted on flysch. Only the heart de cuvée is used for this Blanc de Blancs, with part of it fermenting in the barrel and the other in stainless vats. After malolactic fermentation, the basic wine is bottled without fining or filtration for the secondary fermentation with a minimum of forty months ageing sur lie with the final dosage of 3 g/l.

It lits our glass with a brilliant, golden yellow colour with many tiny and persistent bubbles.

Its bouquet is luxurious, highlighted. We detect ripe yellow plum, apple, pineapple and pomelo. At the same time, lemon peel, which combines with the aromas of butter, sweet bread, vanilla and roasted nuts.

The taste is intense, bone dry, but also noticeable soft. Its acidity, combined with bubbles that caress us, balances the perception, and the finish is wonderfully mineral. A structured and elegant sparkling wine of lasting and refined persistency.
