We’re returning to Domaine Slapšak tonight, as it is opportune to open a bottle of their Penina as festivities are approaching and, as the celebration is on as Andrej Slapšak celebrates his birthday tonight. What better choice to celebrate by opening and cheering with a bottle of their Brut reserve, a cuvée of Pinot noir, Chardonnay and Žametna črnina produced with the methode traditionelle.
This undoubtedly is the flagship wine of the house and one of the very much suggested sparklers for your end-of-the-year festivities. In addition, it is one of the first Peninas to have more than 50 % of the reserve wine in the blend.
Up to four vintages are used in this cuvée consisting of 30 % Pinot noir, 30 % Chardonnay and 40 % Žametna črnina, where the secondary fermentation with sur lie maturation lasts for 15 months, with the final dosage of 2 g/l.
Brut reserve lits our glass with a brilliant, crystal clear, strawy yellow colour with a golden hue in which numerous, small, and very persistent pearls reflect.
We glimpse aromas of ripe yellow fruit, apple, mango and orange, with autolytic scents of bread crust, almonds and pan-brioche, and a slight note of vanilla spoiling us at the end.
The taste is bone dry, with a soft feel. The perlage pleasantly fills our mouths and, combined with crisp acidity, cleanse them, leaving the palate sensing its mineral underpin. A Penina of intensity, structure and lasting, elegant persistency.
