I’m in the mood to discover other Kristalvin‘s wines. I’ve been intrigued with their Rebula Selection, so now it’s time to look at another one from the range. Today’s pick is their Jakob, or as you might have guessed, the variation of Sauvignon Vert, matured in oak barrels.

Grapes are handpicked early in the morning. After destemming and crushing, they macerate with spontaneous fermentation. Finally, the mash is gently pressed, and the wine goes to mature for a year in large, 500-litre oak barrels, also conducting malolactic conversion. After bottling, it rests in the cellar for seven months before coming to the market.

This results in a Sauvignon vert of golden yellow colour and dense texture.

Its bouquet is intense, evoking ripe kiwi, pineapple, orange peel, yellow apple and plum, dried persimmon slices, apricot, yellow rose and thyme. We also find notes of vanilla, butter, white pepper and hot stone.

Jakob is dry, with just the right balance with its crisp freshness, minerality and oily texture. Fruit flavours are also arising on the palate, we have tropics, and herbal notes stand out slightly. Jakob is a full-bodied wine with an elegant taste, and I wouldn’t mind if it lasted even further.
