Bordon - Malvazija Dora, 2015
We’re heading back to the family Bordon, to have a taste of another one of their exceptional wines. This time their homage to Malvazija, with a wine that has been marked by prolonged maceration and maturation in oak barrels.
Malvazija Dora is produced only in the best vintages by a meticulous selection of late-harvested, selected bunches. After destemming and crushing, the mash ferments spontaneously for a longer time. Then, the juice is racked into oak barrels after a gentle pressing, where it is left to mature for the next two years. Finally, it is bottled without filtration and waits patiently in the cellar to fully integrate before coming to the market.
This results in a Malvazija of slightly hazy, amber coloured with an oily texture.
Its aromas are intense, fragrant. We detect candied citrus intricated with toastiness and caramel. Orange peel, honey, apricot jam, raisins and notes of roasted nuts.
The wine has a warming effect and, at the same time, has a good dose of acidity, making us salivate while we perceive a slight amount of tannins—a speciality of a virtuous character, intensity and long-lasting, elegant taste.
A Malvazija that you can easily forget for the next seven and more years, but surely, it will leave a charming mark in your memory. A bottle will cost you approximately 30 Eur, and you can order it at Okusi Istre and Vinoforte.
