Dolfo - Rumena rebula, 2019
We’re returning to the Skočaj family tonight to taste their rendition of Brda’s own Rebula. We’re at the Dolfo wine cellar and the wine we’re on to taste is marked by maceration and maturation in stainless vats.
Grapes were hand-harvested in the second half of September. After destemming and crushing the mash was macerated with fermentation for four days, at temperatures of approximately 24 ° Celsius. Following a gentle pressing, the juice was racked into stainless vats where it finished the fermentation and matured on fine lees for the whole coming year.
Dolfo’s Rebula presents with a crystalline, strawy yellow in colour, with a dense texture.
Its bouquet is pronounced, we regard lemon, peach, Jonagold apple, slight notes of honey with almonds and straw.
Its taste is intense, soft and noticeably warm. At the same time, it has just the right amount of freshness and minerality to keep it balanced. An intense wine with medium structure and accentuated elegant, lasting taste.
A wine that cleverly combines the craft to elevate the best from the variety, while retaining its aromatic profile and giving it the stamina to last for the next three to five years. A bottle will cost you approximately 10 Eur and you can order it at eVino, BottleofItaly and Italian wine lovers.
