Dolfo - Spirito, 2015
It is time we return to the Skočaj family to taste one of Slovenia’s sparklers you have to try. We’ll be looking at Dolfo‘s Spirito, a vintage Penina produced in 2015 from Chardonnay and Pinot noir.
Grapes are coming from the Ceglo vineyard, a plot just below the cellar that you can admire while sipping some of their wines. Grapes are directly pressed, and the basic wine ferments in stainless vats at temperatures below 18 ° Celsius. Then, finally, it is bottled and ready for the priese de musse. Secondary fermentation with maturation lasts for at least four years before its disgorging.
Spirito presents with a brilliant, crystal clear, golden yellow colour in which many, medium and long-lasting bubbles are reflected.
Its bouquet is accentuated. We remark orange peel, lemon zest, pineapple and apple slices, with almonds, butter, and bread crust scents.
Its pearls bloom in the mouth, emphasizing acidity and minerality, evoking especially dried fruit flavours—a wine of intensity and persistence, medium-bodied with lasting, elegant persistence.
