Let’s return to the wine cellar of Dveri Pax, this time to taste their selected expression of Chardonnay, which has seen only its fourth edition under the line “V” and has been produced by maturation in oak barrels.

After 2008, 2011 and 2015, the vintage 2017 generated such results it allowed for the production of this specially released Chardonnay. It had a warm and dry summer which allowed for quick and optimal ripening of Chardonnay, and its harvest happened quite early – in the middle of September. And the V in the name stands for the vineyard – in this case, Vajgen.

Production was classical with a two-year maturation on fine lees in large, 600-litre oak barrels of French origin.

This resulted in a crystal clear Chardonnay with golden yellow colour and expressed density.

Its bouquet is majestic; we detect lemon peel, yellow apple, quince, pollen, and aromas of herbs, which are joined by scents of butter and roasted nuts.

The taste is pronounced and soft, with alcohols well integrated into the structure. Its freshness is vivid and leaves a slightly bitter mineral aftertaste. An intense, full-bodied wine with a lasting, elegant aftertaste with perceptions of ripe fruit, roasted nuts and herbs.
