Time to move to Brda, to the village of Medana, to return to the Kristančič family. We’ll be looking at their Chardonnay Pavó, a wine matured for a year in oak barrels.

At Kristančič, Pavó stands for nobility, for power and expression, yet marked by pronounced elegance. And these are the characteristics of this carefully produced Chardonnay. For this wine, only the best, healthiest bunches from their eldest vines are selected. The production is meticulous and follows classical ways, with twelve months of maturation in selected barriques, with further maturation in the bottle prior to its introduction to the market.

The results? A Chardonnay of crystalline, golden yellow colour with dense texture.

Its bouquet is sophisticated. We identify ripe apple, yellow plum, yellow fig, quince, and peach, lemon peel, honey, butter, vanilla, cedar and in the finish, a gentle touch of nutmeg.

The palate is dry, soft and reasonably warm. Its freshness is ripe and ultimately leaves a mineral undertone. An intense, full-bodied wine with long-lasting persistence, revealing its pronounced elegance with a lasting aftertaste dosing it all in the form of waves. We notice flavours of dried apple slices, raisins, cloves, vanilla and butter.
