Time for us to introduce someone new here, and we’re moving above Vipava valley to probably one of the highest planted vineyards of Rebula. We’re at Edvard and Ivi Svetlik, and tonight we’ll be tasting their amber Rebula Selekcija.

Ripe grapes are usually picked at the beginning of October, pretty late. Grapes are destemmed, crushed and undergo a fourteen-day maceration with alcoholic fermentation, which started with the piede the cuve – the fermentation starter prepared from the same grapes picked a couple of days before.

The mash is then gently pressed and racked into large Slavonian oak barrels that have been produced in Austria, where it matures for two years. Finally, it is bottled without fining and filtration.

This expresses in an extractive, amber-coloured wine with a thick viscosity.

The bouquet is intense and reveals candied orange, apricot, raisins, notes of thyme, wood, almonds, and hints of dried flowers with a touch of liquorice.

The taste is intense, reasonably soft. The freshness is emphasized and reveals a handful of velvety tannins and minerality. A wine of intensity, with a vigorous body and a lasting, elegant persistency
