Karst and its people. There is a bond with this land, a land that has a special bond with its inhabitants and traditions. Tonight we’ll be sipping a wine that tries to emanate this bond. We’ll be looking at Štoka’s Cara, a blend of Vitovska, Malvazija and Chardonnay that matured in oak.

This cuvée is a homage to the root word Cara, which means rock, so typical in the district. Grapes have been destemmed and crushed; after a five-day maceration with fermentation, the juice was racked into oak barriques, where it matured for the next three years, to be then bottled.

This expresses in a crystal, golden yellow coloured wine with a dense texture illustrated by slowly slipping tears.

Its aromas are intense and refined. First, we detect ripe apple, kiwi jam, pineapple and papaya. Followed by aromas of candied lemon, floral honey, vanilla and cinnamon.

Its taste is soft and warm. Freshness is youthful and flirts with minerality helping to balance the taste, which is intense, full-bodied and elegantly long-lasting.

A wine that will evolve in the next five to seven years. A bottle will cost you approximately 25 Eur and is currently available at Be.Wines.
