Let’s head tonight to the sunny Slovenian Istria. We’re at the Bordon family, looking at their pristine expression of Malvasia Istriana.
Grapes are coming from organically farmed vineyards above the village of Dekani. The slopes are facing east to west and southern exposures, so they benefit from long sunny exposures. Therefore grapes ripen and concentrate, allowing the production of such an expressive rendition of the variety itself.
The vinification concentrates on bringing the most of primary aromas into the final wine. Therefore this wine sees approximately four months of stainless vats at controlled temperatures before being bottled.
This results in a Malvasia with a deep golden yellow colour and dense texture.
The bouquet is intense, varietal. We notice pineapple, acacia flower, apricot, orange peel, yellow apple, also a note of white pepper, honey ending with a touch of butter and thyme.
The texture is oily, with nicely incorporated alcohol. At the same time, it refreshes us and leaves a pleasant mineral signature and a slight spiciness. The aromas of tropical fruit and acacia are replicated on the palate, and we also notice a hit of grape berries, honey and acacia flowers.
