It’s time to return to the wine cellar Dveri Pax. The wine cellar continues the more than eight centuries-long winemaking tradition of the benedictine monks in Slovenia’s northeast. Today we’ll have a look at their selected Sauvignon blanc, bearing the name of the vineyard from which grapes have been harvested.

Vajgen is the name of one of the steepest vineyards in the vicinity of the cellar in Jarenina, which is known for giving impressive results. Grapes have followed a rather classical production, with the juice maturing for 18 months in large 3,500-litre Slavonian oak barrels on fine lees.

Sauvignon Vajgen presents a crystal clear, lemon yellow colour with thick viscosity, making it quickly stopping in the glass.

Its bouquet is alluring, inviting. We detect rosemary, oregano, a note of ripe elderflower, tangerine and pomelo, honey, eventually notes of ripe apple, lemongrass and sweet spices start to distinguish themselves out of a constantly present scent of tomato leaf. The impact of maturation in oak on fine lees is minimal.

A dry expression with softness and warmth that are soon covered by his vividly refreshing and mineral imprint. An intense wine of exceptional elegance and structure, with a lasting aftertaste that many will adore.

The price level for this wine is set to 14 Eur. This is the vintage that is coming so slowly it will start its presentation to the market. It’s just me been lucky to have been given an exclusive look into what is about to come to the market.
