Let’s move tonight to Štajerska Slovenija. We’re returning to Doppler to look at their rendition of Sauvignon Blanc. A grape variety that has been giving good results in this area, and I am very much looking forward to tackling this wine.

Vineyards are planted at an altitude between 300 to 360 meters above sea level and are planted in a mixture of flysch, sandstone and clay. Hand-harvested grapes are destemmed and crushed. The must is cooled down and left to clarify through sedimentation.

It is then racked in stainless vats to ferment at temperatures between 12 and 20 ° Celsius. Part of the wine was racked into oak barrels, with Batonnage impacting a new depth to the final result. After the assemblage, it was finally bottled with filtration and introduced to the market.

This results in a Sauvignon blanc with crystalline golden yellow colour and dense texture.

Aromas are intense and refined, immediately revealing the variety’s typicity. We perceive jasmine and elderflower petals, papaya, Jonagold apple, bergamot and yellow grapefruit, gooseberry, a note of crisp dough and a mineral note reminiscent of marl.

The taste is off-dry, soft and fairly warm. Its freshness reveals a crisp character underlined by the minerality. An intense wine where freshness comes out and is regulated by a slight perception of sugar. Its taste is elegant and persistent, full-bodied and revealing flavours of grapefruit, apple and gooseberry on the palate.
