We’re returning to M, simply good wines today to taste their Extrem, a single vineyard expression of Sauvignon blanc that has spent some time in oak barrels. So for lovers of expressive Sauvignon Blancs with a touch of sweet spices, this post will be of interest.

Grapes come from a particular vineyard that comes from a less steep vineyard at a lower altitude than the one we taste in their pure, classically produced expression. These are the characteristics that impact a character and organoleptic profile that speaks for itself.

Sauvignon Blanc bunches are hand-picked and sorted in the vineyard. After destemming and crushing, part of the mash is divided into two parts to macerate for different times. Fermentation is started spontaneously with wine maturing for 18 months in a 500-litre barrel on fine lees, fully executing malolactic conversion. Finally, it is bottled with minimum addition of sulphites.

The bouquet is alluring, varietal, immediately expressing its maturation in barrels. We perceive notes of mint, rosemary, tomato leaf, lemongrass, ripe gooseberry and mango, with a touch of vanilla and butter.

The taste is intense, dry, with an oily feel. Its crisp freshness is pleasing, and the finish adds a touch of mineral salinity. A balanced and full-bodied wine with a lasting persistency and expressive elegance. A wine that wouldn’t mind being served over a full table of delicacies in the company of friends.
