We’re returning tonight to the Vodopivec family in the village of Potok, Vipava valley, to have a look at one of those expressions of wines produced with ancient winemaking practices lifting that feeling of nostalgia. We’re looking at the Slavček Rebula reserve. A wine produced only in selected vintages that spent extensive time on skin contact with further maturation in oak barrels.

There are some really steep slopes above Potok and the effort that the Vodopivec invest is plain and straightforward respectful. All vineyards are organically farmed; the Rebula vines count for 25 years and are planted on Flysch.

Grapes were hand-picked when overripe, following destemming and crushing the mash macerated with spontaneous fermentation for three weeks. Intensive cape management was executed through this period. This allowed extraction of colours, tannins and all substances, guaranteeing a wine of character. Finally, the young wine was racked in a large, 2.200-litre oak barrel with fine lees where it matured for two years.

This results in a Rebula of a hazy, amber colour with dense texture.

The bouquet is accentuated, emanating overripe and dried fruit. Dried apple slices, tropical fruit, dried flowers, honey notes, as well as a slight animal note, paving the way to sweet spices, caramel and dried Mediterranean herbs.

Undoubtedly a unique, dry wine with a vigorous body. Refreshing and mineral salty, with an astringent finish. The taste is persistent and elegant. A one of a kind Rebula from Vipava valley, which pays homage to ancestors in a majestic way!
