Let’s return to the Sanabor family tonight to taste their Palidia. A Penina is the term used to define qualitative sparkling wine in Slovenia produced by sole Malvazija following the traditional method of secondary fermentation in the bottle.

There is passion and substance in each of Sanabor’s wines, which is apparent when meeting Igor Sanabor, an avid lover of sparkling wine and Champagne in primis. Something he tries to express also at the Karstic plateau, on a terrain that mixes the red soil with marlstone, is an interesting combination indeed.

Grapes for this wine come from four plots that each contributes a specific aspect to the final crescendo. And some of these vines are old. But not just this, one plot is planted according to the typical Kast training system.

The basic wine is fermented in stainless vats to finally undergo a 36 fermentation, with maturation on fine less in the bottle. The disgorging is conducted by hand, and there’s no dosage. Just the exact wine is added to the bottle.

This results in a sparkling Malvazija that many can admire. Brilliant, strawy yellow with a golden hue. Numerous tiny and rather persistent bubbles.

Its bouquet is accentuated and exceptionally fruity. We notice a red apple, tangerine, and hints of acacia blossom. At the same time, we detect nuts, pan brioche and a pleasant mineral scent of marl.

A bone-dry wine with perceivable softness, at the same time refreshing and minerally salty. A wine of structure and intensity, offering an elegant and lasting taste
